Matured Extra Virgin Olive Oil (100% Provençal)
Mature Olive Oil by Domaine de Leos
Domaine de Leos' Mature Olive Oil (AOP Provence) is celebrated by top chefs and experts worldwide. Since its launch in 2017, Leos Oils have garnered 60 international awards, including 25 gold medals.
Provençal Origin
Made exclusively from olives in the Provence region, this Oil is crafted from matured olives, known as “black fruity.” The olive trees benefit from the region's Mediterranean climate, stony soils, generous sunshine, and cool nights, which contribute to the oil’s distinctive aromas. It is designed and produced by the teams at "Domaine de Leos" and "Moulin Castelas". The olives are cold-extracted and 100% virgin olive oil, adhering to the Protected Designation of Origin (AOP Provence) standards, ensuring high-quality cultivation, harvesting, crushing, and preservation methods.
Tasting Notes
Aromatic and very smooth, this oil has a pleasant length on the palate with an intense and complex “original” black fruitiness. It features a beautiful colour and aromatic richness, with dominant powerful aromas of candied olives and truffle, along with notes of cocoa, black tapenade, and vanilla. Its creamy texture makes it a delight for the taste buds.
Storage and Shelf Life
Olive oils do not have expiry dates but have an optimal use-by date of two years. After this, they gradually lose their aromatic quality. Domaine de Leos packages their oils in dark bottles to prevent odor absorption and light-induced alterations. For best results, store the oil away from light and heat, in a cool, dry place to maintain its flavors and nutritional benefits.

Health & Nutritional Values:
Rich in monounsaturated fatty acids and antioxidants, the health benefits of olive oil are regularly mentioned in the media and are the subject of numerous international studies. It is also an excellent source of vitamin E and polyphenols.
Our recommendation:
Enjoy it cold as a finishing oil on all types of foods, savoury and sweet. It goes perfectly with Mediterranean dishes such as salads, aioli, grilled fish, roasted meats and seasonal vegetables. It can also be used to enhance more exotic dishes, bringing a touch of authenticity to each bite.
About the artisans:
I love the story of "Domaine de Leos" and I am very proud I can offer their exclusive products, highly acclaimed by Alain Ducasse, Joël Robuchon and other top chefs of France. What makes it special for me?
First of all - when I tried Leos' olive oil for the first time (my pupils expanded, angels starting chanting "Ecstasy of Gold”), I realised I had never truly tried OLIVE OIL, even though I had been cooking with it for years.
Second - "Domaine de Leos" is a living image of starting from scratch and patiently and methodically developing a dream over the years. Read here the full story how they did it.
